What is Calorie?
A calorie is a unit that measures energy — specifically, the small calorie is defined as the energy needed to raise the temperature of 1 gram of water by 1°C. Food labels use the large Calorie (capital C), which equals 1,000 small calories, also called a kilocalorie (kcal); "100 Calories" on a label and "100 kcal" mean the same thing. The body uses food calories to fuel every process it performs, from breathing and digestion to lifting weights, and weight change over time comes down to the balance between calories eaten and calories burned.
How it works
Food energy is measured in one of two ways: directly, using a bomb calorimeter that burns a food sample and measures the heat released, or calculated, using the Atwater system, which multiplies the grams of protein, carbohydrate, fat, and alcohol in a food by a fixed calories-per-gram factor and adds the results together. Nutrition labels almost universally use the calculated Atwater method rather than calorimetry for everyday products. In the body, calories from food are used for immediate energy, stored as glycogen, or stored as body fat once energy needs and glycogen stores are met; eating consistently more calories than you burn (a surplus) leads to weight gain, while eating consistently fewer (a deficit) leads to weight loss.
The formula
Total calories = (protein g x 4) + (carbohydrate g x 4) + (fat g x 9) + (alcohol g x 7)
These are the Atwater general factors, developed in the 1890s by Wilbur Atwater and still the global standard for the calorie counts on nutrition labels. Example: a food with 20 g protein, 30 g carbs, and 10 g fat = (20x4) + (30x4) + (10x9) = 80 + 120 + 90 = 290 kcal.
Worked example
Say a food label lists 250 kcal per serving, from 10 g protein, 30 g carbs, and 12 g fat. Here's how those grams add up to the calorie count using the Atwater factors.

Labels can round or use slightly refined factors for some foods, so the calculated total won't always match the printed number to the exact calorie.

Common misconceptions
- "A calorie from any food affects your body the same way." All calories are equal for energy balance (weight gain or loss), but different foods affect satiety, muscle retention, and health very differently at the same calorie count.
- "Nutrition labels measure calories by literally burning your food in a lab." Most labels use the calculated Atwater method (grams of protein/carbs/fat multiplied by their kcal/g factor), not direct bomb calorimetry, for everyday food products.
- "Cutting calories very low is the fastest way to lose fat long-term." Very low-calorie diets increase muscle loss and are hard to sustain; a moderate, sustained deficit preserves more muscle and is more likely to stick.
