What is Dietary Fat?

Dietary fat is a macronutrient made of fatty acids and glycerol that supplies 9 calories per gram, more than double protein or carbs, including saturated, unsaturated, and trans forms found in oils, nuts, dairy, and meat, that support hormone production and vitamin absorption.

What is Dietary Fat?

Dietary fat is one of the three macronutrients, alongside protein and carbohydrates, that the body needs in relatively large amounts for energy and normal function. Chemically, it's made of fatty acid chains attached to a glycerol backbone, and different fatty acid structures create the different types of fat, saturated, monounsaturated, polyunsaturated, and trans, found in food. Gram for gram, fat is the most calorie-dense macronutrient at 9 calories per gram, compared with 4 calories per gram for both protein and carbohydrate, which is why high-fat foods add up in calories quickly.

How it works

Dietary fat works in the body in several distinct roles beyond just providing energy: it's a building block for cell membranes and hormones, including testosterone and estrogen, it's required to absorb the fat-soluble vitamins A, D, E, and K from food, it cushions and insulates organs, and it slows digestion in a way that increases satiety after a meal. When fat intake exceeds what's needed for these functions and for energy that day, the excess is stored as body fat for later use. The type of fat matters for long-term health: unsaturated fats, found in olive oil, nuts, avocado, and fish, are generally linked to better cholesterol profiles and heart health, while diets very high in saturated fat and trans fat are linked to higher LDL cholesterol and cardiovascular risk.

The formula

Fat calories = grams of fat x 9 kcal/g

This is the standard Atwater energy factor for fat — compare with 4 kcal/g for protein and carbohydrate, and 7 kcal/g for alcohol.

Types

Saturated fat

Solid at room temperature; found mostly in animal products like meat, butter, and cheese. Guidelines recommend keeping it under roughly 10% of daily calories.

Monounsaturated fat

Liquid at room temperature; found in olive oil, avocado, and most nuts. Linked to improved cholesterol profiles when replacing saturated fat.

Polyunsaturated fat

Liquid at room temperature; includes omega-3 and omega-6 fatty acids from fish, seeds, and vegetable oils. Some, like omega-3s, are essential — the body can't make them.

Trans fat

Formed by partially hydrogenating vegetable oils; raises LDL and lowers HDL cholesterol more than any other fat type and has been largely phased out of the food supply in many countries.

Common misconceptions

  • "Eating fat makes you fat." Body fat gain comes from consistently eating more total calories than you burn, regardless of which macronutrient those calories come from — dietary fat is calorie-dense, which makes overeating it easy, but it isn't uniquely fattening gram for gram.
  • "All fats are bad for you." Unsaturated fats from sources like olive oil, nuts, and fish are linked to better cardiovascular health outcomes and are considered a core part of a healthy diet — it's excess saturated fat and trans fat that public health guidelines recommend limiting.
  • "You should eat as little fat as possible to lose weight or get lean." Very low fat intake risks inadequate essential fatty acids and impaired absorption of vitamins A, D, E, and K, and can affect hormone production; most guidelines recommend keeping fat at roughly 20-35% of calories even in a deficit.
